This quick and easy pancit bihon recipe is sure to be the star at the party. All you need to do is toss the ingredients in one pot—it's a filling dish done in minutes for the whole family. Chicken breast and Chinese sausage give this dish an extra kick of flavor. The carrots, bell peppers, and cabbage, also add a beautiful pop of color to the dish.
2 tablespoons cooking oil
1 medium chicken breast, cubed
1 green bell pepper, julienned
1 red bell pepper, julienned
1 medium carrot, julienned
1/2 kg rice noodles (bihon), cooked according to package instructions
1 Chinese sausage, sliced
1/2 cup uncooked shrimps, de-shelled and de-veined (optional)
1 small cabbage, shredded
pepper, to taste
1 Heat oil in a pan and saute the garlic and onion
2 Add the pork and chicken. Cook for 3 minutes or until browned then add the bell peppers, and carrots.
3 Add the chicken broth, soy sauce, and fish sauce. Allow to cook for about 1 minute.
4 Add the noodles and stir constantly until most of the liquid is absorbed.
5 Add the sausage, shrimp, and cabbage. Toss until well-combined. Season with salt and pepper.
6 Serve with slices of calamansi.
