WATCH: How to Make Pancit Buko

You may have tried various versions of pancit but this one is sweet and has flavors of the sea. This pancit dish also uses coconut meat instead of noodles!Â

½ cup coconut cream (for the latik)
3 tablespoons coconut oil
30 grams red onions, minced
4 garlic cloves, minced
80 grams shrimp, poached
80 grams clams, poached
100 grams mussels (tahong), poached
¾ cup coconut cream
100 ml chicken stock
½ tablespoon fish sauce (patis), or to taste
250 grams buko strips
1/4 cup cilantro, plus more for garnish
1/2 tablespoon black pepper
1 Make the latik: Heat coconut cream in a pan until coconut oil and latik separates. Strain and set latik aside.
2Â In a separate pan, heat coconut oil and saute onions. Add garlic and poached seafood and cook for 1-2 minutes. Add in coconut cream, chicken stock, and season with fish sauce. Add buko strips, cilantro, and season with black pepper.Â

To serve, garnish with cilantro and latik.
