Pancit lomi is a Filipino-Chinese egg noodle soup recipe made with ground pork, pork liver, and veggies. It's a warm and filling bowl of comfort perfect for the cold weather.

2 tablespoons cooking oil
4 cloves garlic, chopped
1 red onion, chopped
1/8 kilo ground pork
1/2 cup pork liver
1 cup squid balls
6 cups water
salt and pepper, to taste
1/2 kilo lomi noodles
1 carrot, thinly sliced
1 cabbage, thinly sliced
2 eggs
onion leeks, chopped, for garnish

Heat cooking oil in a medium-sized pot. Sauté the garlic and onion until fragrant.

Add the pork, pork liver, squid balls. Stir-fry over medium heat for 5 minutes.

Add water and season with salt and pepper. Simmer for 10-15 minutes. Add the lomi noodles and simmer until noodles are cooked.

Add carrots and cabbage. Pour in eggs then stir continuously until eggs are cooked. Transfer to a serving bowl and garnish with onion leeks.
