The Italian Kitchen Trick for Perfect Pasta Sauce
Many pasta recipes ask to reserve some of the pasta cooking water to add to the pasta sauce later on. Why?
The water used to boil pasta noodles becomes cloudy white because it retains the starch released by the noodles as they cook. Adding some of the pasta water to the pasta sauce makes the sauce more flavorful and helps it cling to the noodles, too.
When it comes to pasta, do what the Italians do.
