Saute and stew pork in shrimp paste with tomatoes to make this tangy savory-salty Filipino favorite! Season according to taste and serve with lots rice!

PORK BINAGOONGAN RECIPE
2 to 3 tablespoons oilÂ
1 kilo pork belly, cut into 1-inch cubes
1 small garlic, minced
2 teaspoons ground black pepper
1 medium onion, chopped
4 pieces tomatoes, chopped
1/4 cup shrimp paste or bagoong alamang
1/4 cup vinegar
2 cups of water
3 tablespoons sugar
salt to taste
1Â Heat oil in a medium-sized pan. Render the fat from the pork belly, saute until a bit browned.

2Â Add garlic, black pepper and onion saute for 5 minutes then add the tomatoes.
Â
3Â Pour in the shrimp paste and saute for 5 minutes.
Â
4Â Add the vinegar and let it simmer for 5 minutes.
Â
5Â Add water and let it boil until the liquid has decreased by half. Check for the tenderness of the pork.
Â
6Â Add sugar and adjust seasoning (if needed) and let it simmer again for 5 minutes. Best served warm with rice.
