WATCH: How To Make Creamy, Cheesy Cauliflower Rice

Healthy cauliflower gets cheesy, creamy, and incredibly delicious in this all-in-one dish.

This is the creamiest, cheesiest cauliflower dish you'll ever taste! 

An entire head of cauliflower is finely chopped before it is tossed into a mixture that transforms it into a cheesy, creamy, and incredibly delicious all-in-one dish. It's so good, you won't notice there's no rice in it at all.   

Creamy Keto Cauli-Rice Recipe

Makes 4servings


1/2 kilogram cauliflower florets, roughly chopped

1 1/4 cups mozzarella cheese, grated

1 1/4 cups cheddar cheese, grated

2 tablespoons unsalted grass-fed butter

3 cloves garlic, peeled, finely chopped

1 medium red onion, peeled, finely chopped

3 small chorizo de Bilbao, chopped

1 cup chicken breast fillet, cubed small

1 cup green and red bell peppers, seeded, cubed small

1 tomato, chopped

1/2 chicken bouillon cube

1/2 teaspoon Italian seasoning

3/4 cup cooking cream


1 Place cauliflower in a food processor. Process until cauliflower is finely chopped. (Cauliflower rice amounts to around 3 cups.) Set aside. Mix mozzarella and cheddar cheese together. Set aside.



2 In a wok over medium heat, melt butter. Add garlic and onion and sauté until just softened. Add chorizo and chicken, and cook until chicken is cooked through and chorizo has slightly crisped.


3 Add cauliflower. Toss until well combined. Add and stir in peppers and tomato. Add bouillon cube and Italian seasoning. Season with salt and pepper to taste, and stir until dissolved and well blended. Remove from heat, and stir in cooking cream, and half the mozzarella and cheddar mix. (The rice mixture should have an almost creamy and gooey consistency.)


4 Divide and transfer cauliflower mixture to oven-proof dishes. Sprinkle on top of cauli-rice. Toast in a toaster oven or bake in a preheated oven to 350 degrees F (180 degrees C) for about 10 to 15 minutes or until the cheese has melted and begins to brown. (Alternatively, microwave on High for about 2 minutes or until the cheeses have melted and begins to bubble.) Serve while hot.
