Coconut milk, or gata, is a ubiquitous ingredient in Filipino cuisine. Pour some into your stews and braises for added creaminess, whip up a fantastic dessert with it, or pour it over your coffeeGata is also a great option for a dairy-free milk substitution! 

 

 

1  Cook your rice in gata

 

This neat cooking tip is obvious: if you want fragrant, fluffy steamed rice, incorporate a little gata into the mix before steaming! Replace 1/3 of your water content with coconut milk, and immediately fluff after steaming. Use this in fried rice or rice bowl recipes! 

 

 

2  Make dairy-free popsicles. 

 

Gata freezes into wonderfully creamy, melty popsicles! Pair this heavy-on-the-tongue milk with fresh and vibrant flavors like calamansi, lemon, strawberries, and mangoes! Or, make a tropical version of cookies and cream popsicles: Mix 1 can of coconut milk, 20 lightly crushed Oreos, 1/2 teaspoon vanilla, and a pinch of salt together. Pour into popsicles molds and freeze overnight. To decorate, dip in chocolate ganache and sprinkle with toasted coconut flakes

3  Whip it into fluffy coconut cream. 

 

Looking for a lighter, healthier substitute for heavy whipping cream? Top your desserts with whipped coconut milk instead. Place 1 can of coconut milk in the refrigerator overnight. Scoop out the thickened coconut milk and whip with a hand mixer for 1 minute.
