You can use the same marinade for pork barbecue!

If you love chicken barbecue but also love the sweet-savory goodness of pork barbecue sauce, you can have both in this easy-to-make inihaw na manok. This grilled chicken barbecue uses a sweet-style sauce similar to the marinade used for Pinoy-style barbecue. You can also tweak it to your liking: add a bit more brown sugar or add more hot sauce. It's all up to you!

Pinoy-style Chicken Barbecue

  • Serves 4
  • 1 cup banana ketchup
  • 2/3 cup soy sauce
  • 1 tablespoon liquid seasoning
  • 1 whole garlic, minced
  • 1/4 cup calamansi juice
  • 1/2 cup lemon-lime soda
  • 1/2 teaspoon hot sauce
  • 1/2 cup brown sugar
  • black pepper, to taste
  • 1 kilo chicken legs
  • 1 Make the marinade: In a large bowl, mix banana ketchup, soy sauce, soy sauce, garlic, calamansi juice, pepper, sugar, lime-flavored soda, and hot sauce.
  • 2 Set aside 1 cup of the marinade for basting, then pour remaining marinade over the chicken. Pierce the chicken using a fork so the marinade can flavor the chicken meat. Marinate chicken for atleast 30 minutes in the refrigerator.
  • 3 Place chicken on a preheated grill. Baste chicken often to keep the meat from drying out. Grill until chicken is cooked through. Serve hot.
