WATCH: How to Make Menudo

Extra rice, please!

 

Menudo is a popular one-pot Filipino pork dish best served with lots of steamed rice! Every Filipino home has its own take on menudo-some put hotdog slices and raisins-so feel free to take this recipe and make it your own! 

 

2 tablespoons cooking oil
3 cloves garlic, minced
1 small onion, chopped
1 kilo pork
1/2 cup soy sauce
1 teaspoon sugar
¾ cup tomato sauce
1 cup water 2 to 3
1 pc dried bay leaf
¼ kilo pork liver (or 250g liver spread)
1 cup potatoes, sliced into 2 inches
1 cup carrots, sliced into 2 inches
salt and pepper, to taste
 
 
1 In a saucepan, saute garlic and onion in oil.
 
2 Add the pork. Cook for 5 minutes.
 
3 Pour in soy sauce, sugar, tomato sauce and water and then add the bay leaves.
 
4 Simmer for 30 minutes or until the pork is tender.
 
5 Add the the liver and cook for 5 minutes.
 
6 Add potatoes, carrots, then season with salt, and pepper.
 
7 Stir and cook for 15 minutes.
