Menudo is a popular one-pot Filipino pork dish best served with lots of steamed rice! Every Filipino home has its own take on menudo—some put hotdog slices and raisins—so feel free to take this recipe and make it your own!

2 tablespoons cooking oil
¼ kilo pork liver (or 250g liver spread)
1 cup potatoes, sliced into 2 inches
1 cup carrots, sliced into 2 inches
salt and pepper, to taste
1 In a saucepan, saute garlic and onion in oil.
2 Add the pork. Cook for 5 minutes.
3 Pour in soy sauce, sugar, tomato sauce and water and then add the bay leaves.
4 Simmer for 30 minutes or until the pork is tender.
5 Add the the liver and cook for 5 minutes.
6 Add potatoes, carrots, then season with salt, and pepper.
7 Stir and cook for 15 minutes.
