Pork Meatballs in Sweet and Sour Sauce

1/2 kilo ground pork
1 medium carrot, minced
1 teaspoon salt
1/2 teaspoon ground pepper
1 medium egg
1 tablespoon flour
oil, for frying
1 cup sweet chili sauce
1 medium onion, sliced
1 small red bell pepper, julienned
1 small carrot, julienned
1/2 cup pineapple chunks
1/2 cup water

Make the meatballs: In a medium-sized bowl, mix the ground pork, carrots, salt, ground pepper, egg, and flour together until well combined.

Form into 1 ½-inch balls then set aside in the freezer for 10 minutes.

Pre-heat oil in a medium-sized pan. Fry meatballs until golden brown, about 8 to 10 minutes. Set aside.

Make the sauce: combine sweet chili sauce, onion, carrot, red bell pepper, pineapple chunks, and water in a pot. Allow to simmer for 10 minutes or until the sauce is a bit thick.

Drizzle over fried meatballs before serving.
