You Can Easily Turn Your Salad into Dinner

Salads can go from side dish to full meal with a few simple tweaks. With these additions, you won't be getting up at midnight ala-Nigella to raid your refrigerator for snacks! These ingredients will keep your salads meatless-but feel free to add leftover chicken, pork, or beef to make your salads heftier.

 

Eggs

Sliced hard-boiled eggs make for easy eating (isn't it great that you can still pick it up with a fork?), but soft-boiled or poached eggs can coat your salad greens with beautiful golden yolks.

 

Beans

Red beans, roasted chickpeas, or edamame can fill you up quickly and are rich in protein and healthy fats. Win-win!

 

Bread

Toast that day-old baguette, rub it down with freshly peeled garlic, and chop them up to make a hefty classic panzanella salad. Wasn't that easy?

 

Pasta

Toss in hearty cherry tomatoes, fresh herbs, greens, cheese, tuna, olive oil, and a squeeze of lemon juice into your favorite pasta to make a quick and easy pasta salad.
