1 Plan ahead.
Remember to thaw your meat in the refrigerator the day before and cook them at room temperature. Pat the steaks dry before seasoning and searing to get a good crust.
3 Be generous with seasoning.
Season your meat liberally with sea or kosher salt and freshly ground black pepper. This is all you need to make the flavor of your meat shine.
4 Keep the heat on high.
The secret to knowing if your heavy-bottomed skillet or grill is at the right temperature to get a good sear on your steak: it's ready if you can't hold your hand over it for 2 seconds.
5 Take the temperature.
A sure-fire way of knowing if you nailed the right temperature is by using an instant-read digital thermometer.
6 Let it rest.
Let your cooked steaks rest for 10-15 minutes after cooking. The juice need to redistribute and if you cut into it too soon, they will all run out.
