This Is How You Can Make The Most Flavorful Garlic Fried Rice

You don't need to wait for the oil to heat up.

Cooking sinangag is pretty commonplace for many Filipino households. It's the garlic fried rice that you serve with beef tapa, tocino, daing na bangus, and other breakfast fare.  

While it's a simple recipe, the most basic consisting of toasted garlic tossed in day-old rice, we just learned there is a better way to cook garlic fried rice. It all comes down to how the garlic is cooked.  

We know there are many ways to cook garlic, including how to easily "fry" garlic in the microwave. However, this is a super simple hack that involves cooking the garlic in a different way to extract as much flavor as possible first.

We learned about the brilliant tip in a Food52 video, where the garlic and other aromatics are tossed in oil to infuse the oil with the aromatics first. This isn't a new concept and in fact, it's what you might normally do when you cook the garlic first before adding the rice to the pot.

However, the trick that the video host, Rick Martinez, uses is adding the garlic to oil while it is still cold. The slow heating of the oil will slowly draw out the flavors from the ingredients into the oil. So, the garlic flavors the oil as it heats up.

That means you do not have to wait for the oil or even the pan to heat up before starting your dish! You can add the oil and the garlic to the pan and let it heat up while you prepare the rest of your ingredients or hover over the frying pan as the longganisa cooks. 

Want to try the method and see how amazingly delicious a bowl of simple fried rice like your sinangag can become with this garlic-infused oil? Here's how you do it: 

  1. 1 Place your wok or large saute pan on the stove. Add about 2 tablespoons oil and 4 cloves garlic, chopped or smashed into the cold oil.
  2. 2 Turn on the heat and set it to Low.
  3. 3 Let the oil heat up and when the garlic is sizzling in the oil, let cook until toasted.   
  4. 4 Add the 4 cups day-old rice. Season with salt to taste, and serve while hot.
