How To Make The Tastiest Shrimp Tempura

Making Japanese food is a study in cooking. One of the most popular dishes in Japanese cuisine is tempura. Commonly, it's shrimp that we envision when we think of tempura. It's classic but it's also a recipe that many are intimidated to make because of the delicate coating plus the shrimp itself. There are many recipes for the tempura batter, and there are also tutorials on how to make that shrimp not curl when it's being fried.

However, if you have ever experienced shrimp tempura that lacked flavor, you're not alone. While the sauce is what gives tempura more flavor, the shrimp itself is quite bland without a sauce. If you want shrimp tempura that doesn't require any sauce, you need to learn this simple trick. 

This simple trick before cooking shrimps for tempura will ensure it's delicately seasoned every time: brine it.

As little as 15 to 30 minutes in a salty brine can make shrimp more flavorful once cooked! The salty mixture will not only enhance the sweetness of the shrimp and complement the bland crispy coating, but it will also make it easy to eat by itself without the need for any sauce.

Care to try this method? Here's what to do: 

  • 1 Make enough brine to cover the shrimp. For an easy brine solution, mix and dissolve 2 tablespoons salt with 2 cups water. If needed, heat the solution until the salt is dissolved then cool completely before using.

  • 2 Prepare shrimp as recipe directs but brine shrimp in the brine for 15 minutes up to 30 minutes. 
  • 3 Remove shrimp from the brine, lightly rinse, then pat dry. 
  • 4 Prepare tempura batter as recipe directs and dunk shrimp in the batter before frying. Serve immediately.
