First, store brown sugar in an airtight container to prevent it from drying out—this is the reason why brown sugar clumps together and hardens. You should also put something in the storage container that will lend moisture to the sugar. Popular choices are apple slices, bread, and even marshmallows. They won’t turn rancid but they will dry out, so make sure to change them every week or so.
If you find yourself with a brown sugar brick, don’t worry! Simply microwave it in 30 second bursts for up to 2 minutes, making sure the sugar doesn’t melt.
