Easy Meal Idea: You Can Prepare And Cut Up Potatoes 1 Day Ahead!

Preparing food can be a time-consuming task. This is especially so when you're preparing more than a few vegetables and meats. Stir-fries, in particular, are notorious for having a long list of ingredients that all require to be cut up into small strips, so these can all cook quickly once added to the super-hot wok.

Cutting up vegetables can be done in advance but sometimes, it can take longer than your predicted few hours or overnight storage for you to use the prepared food. There has to be a way to prepare vegetables ahead of time, right?  

What if we told you that there is? It's a way to prepare your vegetables and keep them fresh for up to one whole day (24 hours!) in the refrigerator without it browning, going bad, or even turning slimy.     

This preparation trick from Martha Stewart allows you to prepare potatoes ahead of time.


Potatoes are one of the most common vegetables in recipes. It's easy to add to almost any dish since it can be roasted, baked, stewed, boiled, and fried. However, the process of preparing the potatoes is the time-consuming part. You have to rinse, scrub, peel, and cut up the potatoes while trying to prevent the exposed potato parts from turning brown due to oxidation.

Their method is easy and can be done up to a full day ahead without the potatoes going bad or brown. Here's how to they do it: 

  1. 1 Scrub and rinse potatoes free of dirt and other particles.
  2. 2 Using a vegetable peeler or a paring knife, peel the skins. Remove any eyes and bruised spots. Cut up into the desired pieces.
  3. 3 Store in a bowl with enough water to cover to prevent the potatoes from browning. 
  4. 4 In a large bowl or a jar with a lid, place potatoes and pour enough cold water to cover the vegetables. Cover with plastic wrap or close the lid. 
  5. 5 Store in the refrigerator overnight or up to 24 hours. 
  6. 6 When ready to use, rinse the prepared potatoes and use them as directed in the recipe. 

Want to keep vegetables longer? Druid Things, a local zero-waste website run by advocates of zero waste and low-impact living, prepare carrots in a similar manner but claims that the carrots can stay fresh for weeks, up to a month.



The carrots are cleaned in a baking soda solution to remove dirt and pesticides before being cut up. These are then stored in the refrigerator submerged in clean, filtered water. The big difference in their method is that the water the carrots are soaked in is changed on a regular basis, every few days to maintain the freshness of the carrots. Druid Things actually recommend that it's better to change the water every day. In line with their zero water lifestyle, the water is reused for cooking and for watering their plants.
