Touted by many as the unofficial "national dish" of the Philippines, adobo
is always a favorite. What are your top tips for great tasting adobo?
CHICKEN AND PORK ADOBO RECIPE
½ kilo pork, adobo cut
½ kilo chicken, adobo cut
1 whole bulb of garlic, crushed
1 tablespoon oil 3 cloves garlic, minced
1 In a large bowl, place the chicken and pork together. Add soy sauce, vinegar, bay leaf, peppercorn and garlic. Mix until well-coated then marinate for at least 1 hour.
2 Heat oil in a pan and sauté minced garlic. Cook the pork meats first then chicken meat. Add back the pork and pour in the marinade.
3 Simmer for 15-20 minutes over medium heat. Add ½ cup water and let it simmer for another 10-15 minutes.
