Tocilog — the to- being tocino, for the uninitiated — is just one of the many iterations of silog fare. Pinoys are known to not shy away from adding a bit of sweetness to certain savory dishes (Pinoy-style spaghetti, anyone?), and so tocino, with its sugary glaze that blends perfectly with the savory fried rice and egg, easily ticks off that box.
For something so easy to make (all you have to do is fry!), tocilog is filling, flavorful, and just enough to fuel one for an entire morning.
But just when you think this classic can’t get any better, enter: Tocino Breakfast Bake.
As you may have already guessed, this take on the tocilog was inspired by the trendy sushi bake. Here, the sinangag is made heftier with the addition of peas, carrots, and CDO Funtastyk Young Pork Tocino, and layered with scrambled eggs and even more tocino. Then, it’s topped with melted cheese to make it special and to add more flavor.

TOCINO BREAKFAST BAKE RECIPE
Takes: 40 minutes to 1 hour
Makes: 2-4 servings
Tocino Breakfast Bake Ingredients:
For the tocino layer:
2 tablespoons olive oil
1/4 cup CDO Funtastyk Young Pork Tocino
For the carrot fried rice layer:
2 tablespoons olive oil
2 tablespoons finely chopped garlic
3/4 cup finely chopped carrots
1/4 cup green peas
3 cups cooked CDO Funtastyk Young Pork Tocino
4 cups cooked rice
Salt, to taste
Ground white pepper, to taste
For the scrambled eggs layer:
2 tablespoons olive oil
4 medium eggs
1 cup quick-melting cheese, for the topping
How To Make Tocino Breakfast Bake:
1. Preheat oven to 400 degrees F or 200 degrees C.
2. Make the tocino layer: Heat oil in a pan and fry the CDO Funtastyk Young Pork Tocino. Set aside and allow to cool.
3. Make the carrot fried rice: Heat oil in a pan and sauté garlic, carrots, and peas. Add the cooked CDO Funtastyk Young Pork Tocino and cooked rice. Mix well. Season to taste with salt and pepper. Set aside and allow to cool.
4. Make the scrambled eggs layer: Heat oil in a pan and scramble 4 eggs. Set aside and allow to cool.
5. To assemble the Tocino Breakfast Bake: Place carrot fried rice in an 8×8-inch baking dish and lightly press down for an even layer. Arrange scrambled eggs on top of the rice and lightly press down. Place cooked CDO Funtastyk Young Pork Tocino on top of the scrambled eggs.
6. Sprinkle cheese on top.
7. Bake in the oven for 10-15 minutes or until cheese is melted to a light golden brown color.
