A big food trend from 2019 is the emergence of cloud-like sponge cakes. Singapore's Ah Mah Homemade Egg Sponge Cake is just one of the shops that recently set up shop in the Philippines to offer these freshly-baked sponge cakes.
They have different classics like the Original, Pandan, and Ube flavors, but there are two more new flavors to welcome 2020. Meet the Calamansi Sponge Cake and the Ube Cheese Sponge Cake.
If you love the tangy citrus flavor of calamansi, Ah Mah Homemade Egg Sponge Cake's Calamansi Sponge Cake has that balance between mild tart notes from the calamansi alongside the natural sweetness from the sponge cake. The new Ube and Cheese Sponge Cake, on the other hand, is infused with locally-sourced halaya that gives the sponge cake that distinct earthy, sweet flavor and the signature vibrant purple hue; while the layer of melted cheddar cheese and the grated cheese on top cuts through the flavor of ube.
