Cheesecake is well-loved for its smooth and dense character, while bibingka has a special place in the hearts of Filipinos for its buttery, salty-sweet flavor. Though they might not have much in common (apart from being considered desserts), they actually meld well together and make for a sum that’s far greater than its parts—as proven by the now-popular confection that is the bibingka cheesecake! Many shops have their own takes on the treat, but one noteworthy version in particular is that by Ted’s Kitchen in Santa Cruz, Laguna. The good news is, you can finally get it in Manila by way of Probinsyana, an online shop that brings sweet and savory eats from different parts of Laguna and Quezon right to you!
Ted’s Kitchen’s Bibingka Cheesecake has a rich, coconutty flavor (it’s made with cream cheese and coconut cream!) given a savory contrast from salted duck eggs and kesong puti. It’s definitely a treat for fans of Filipino flavors—or anyone looking for a taste of Christmas in February! Probinsyana sells the said dessert for P1,450, but for the month of February, you can get it for just P1,300. Heads up: The Bibingka Cheesecake keeps for four to five days when refrigerated, and up to 10 days when frozen.
Probinsyana co-owner Trina Ching-Ramos grew up in Laguna, but has been living in Manila ever since she started working. She met Sofia Araneta through Fox Network Groups, where they became colleagues (and bonded over their love of good food)—and they started the business together to share their favorite finds from the province with everyone in Manila. “Sofie and I always thought of distributing these goods but never got around to doing it, until [the pandemic took place],” Ching-Ramos shares in an exchange with SPOT.ph. “My family and I moved back to Laguna because we felt safer here [and] we saw it as an opportunity to bring good food and good finds to Manila.”
At the moment, Probinsyana mostly carries food items from Laguna and Quezon. “The food are goods that my family and I have enjoyed for years,” says Ching-Ramos. Treat your inner spice fan with the Balaw Balaw (P400), a ginataang hipon-like dish from Lumban, Laguna, with a kick of heat; or get yourself some Kesong Puti (P300) to go with your morning pan de sal. For dessert, try the Buko Pie (P350) from The Original Buko Pie in Los Baños, Laguna; or the chewy-sweet Suman sa Lihiya (P320) from San Antonio, Quezon. Beyond these, you can also get other items that are handwoven by artisans from Laguna, like the Triangle Bag (P750) and Water Lily Placemats (P1,000/set of four rectangle placemats; P1,200/set of four round placemats). “Hopefully, we’ll also get to bring other products from different provinces in the Philippines [to you soon].”
Ready to order? Simply send Probinsyana a message on Instagram. The weekly cut-off for orders is on Wednesdays, and the products are delivered on Saturday afternoons. You can opt to have it picked up or delivered via Grab or Lalamove from Mandaluyong or Katipunan.
