Bibingka is a well-loved Filipino delicacy during the holiday season. It's a soft, spongy, and slightly sweet rice cake with butter, shaved fresh coconut, and sugar on top.

This simple but mouthwatering rice cake is made with ingredients versatile enough that it leaves  room for creativity in the kitchen. If you're a big bibingka fan, treat yourself to these interesting bibingka-themed desserts:

Pancake House turned the traditional bibingka into pancakes! The Petite Bibingka Pancakes are topped with grated queso de bola and slices of salted egg. An order of these petite pancakes (three pieces of mini pancakes) comes with a cup of Pancake House's freshly brewed coffee (P159), hot chocolate (P169), or hot tea (P140).

Bibingka Cheesecake from Le Sucre Lab

Most know Le Sucre Lab for their Dream Chocolate Cake, but now they're making another breakthrough with their salty-sweet Bibingka Cheesecake (P685)! This dessert is made with a milky cheesecake that's topped with itlog na maalat (salted egg) and toasted cheese. Just like other Le Sucre Lab cakes, these bibingka cheesecakes are also served in their signature copper-tin can.

Le Sucre Lab's Bibingka Cheesecake is available at 2428 Tejeron Street, Santa Ana, Manila, Metro Manila.

Bibingka Waffle and Bibingka Ice Pop from Goto Monster

Who knew that you can find unique bibingka-flavored dishes inside a gotohan? Goto Monster transformed this rice cake into an equally-delicious Bibingka Waffle (P200) by topping it with bukayo, salted egg, and ube halaya ice cream. Goto Monster offers Bibingka Ice Pops (P60) which are a great after-meal treat after finishing off a bowl of hot goto.

Goto Monster is located at Pablo Ocampo Sr. Extension, La Paz, Makati

Bibingkrepe from Ça Va

What happens when you combine bibingka and crepe? You get Ça Va's special Bibingkrepe (P300)! Instead of the heavy, dense texture of rice cakes you'd usually get in a traditional bibingka, Ça Va transforms it into layers of light, thin, crepe layers combined with all the bibingka elements. These crepes are beautifully topped with slices of salted egg, cheese, and comes with a special creamed milk that's mixed with salted egg.

Ça Va's Bibingkrepes are available at Doña Julia Vargas Ave, Ortigas Center, Pasig, Metro Manila.
