Pasteleria Mallorca's Ensaymada is no ordinary ensaymada. This old-fashioned treat is made using a more-than-century old Kapampangan heirloom recipe. The result is a most buttery bread that's on the dense and rich side, topped generously with even more butter, sugar, and finely grated queso de bola. Before you scoff at the P515/piece pricetag, know that each piece is literally the size of a plate and is quite hefty, too-perfect for sharing. You can count on the Kapampangans to know their ensaymada, and Imang Salud's version (P190) absolutely delivers. It's got a pillowy base that's made rich not just with butter, but also lard, and is covered with sugar and queso de bola. They don't deliver, but you can book a courier to get it delivered to your doorstep-just give them a call.

While there's always room in our stomachs for dense and rich ensaymada, sometimes you just want a lighter bite that won't leave you stuffed and Buttery & Co.'s Ensaymada (P105/piece, P630/box of six, P1,260/box of 12) absolutely fits the bill. It's got a soft brioche base topped with butter, sugar, and Edam cheese for a salt-sweet profile.

Cunanan Ensaymada

This Valle Verde-based purveyor is hailed for their light and fluffy Ensaymada, which comes in mini (starts at P570), small (starts at P475), and large (starts at P950) sizes. Their version is feather-light, with a soft, airy bread base matched with a powdery grated-cheese topping, plus butter and sugar underneath. It's on the mild-tasting side but is extremely balanced, making it all too easy to finish one or two pieces in one sitting.
