This Drool-Worthy Bibingka Has Four Different Kinds of Cheese

The Filipino rice cake is often consumed after attending simbang gabi, and while the yearly tradition is a little more than a month away, that doesn’t mean you can’t go ahead and get your fix right now. As the name implies: the Four Cheese Bibingka has cheese in four forms: a melted-cheese filling, a topping of kesong puti and queso de bola, and a parmesan crisp on top for added texture. It’ll be available starting October 30, and you can score a box of six for P450 and a box of nine for P675. Beyond that, Bibingka Manila also makes other kinds—namely, the classic Original Salted Egg and Cheese (P250/box of six, P370/box of nine) and purple-yam filled Ube Halaya and Cheese (P350/box of six, P520/box of nine).
