This Impossibly Fluffy Cake From Taiwan Is Now in Manila

Grand Castella Cake has 50 branches around Asia.

Remember when everyone wanted to get their hands on a kouign-amann? Or when people lined up for hours for Japanese cheese tarts? Well, it looks like another pastry is about to have its time in the spotlight: Jiggly sponge cakes. A few international bakeries offering the sweet treat have started opening in Manila, and one of the newest is Grand Castella Cake at Eastwood City. The cakeshop from Taiwan specializes in a fluffier, jigglier version of the castella cake, a sponge cake with Portuguese origins.

The history of the castella cake is slightly complicated: The moist sponge cake made with sugar, eggs, flour, and starch syrup is said to have been introduced in the 16th century to Nagasaki, Japan, by Portuguese traders. The castella cakes popular in Japan today are still perfectly fluffy, though more dense-just one of the differences between the Japanese version and the equally popular Taiwanese iteration.

Grand Castella Cake was founded by Master Baker Tai-Cheng Lu on Old Tamsui Street in Taiwan in 2010; the bakery has since expanded to over 50 branches all over Asia. According to Megaworld (which handles Grand Castella Cake's Manila branch), Grand Castella offers "a fluffier, jigglier version of the classic castella cake." Pair a slice of this eggy vanilla cake with milk tea for a snack that just might transport you to Taipei!
