The bestsellers of a menu are usually the dishes that have deserved repeat orders again and again. That’s why this list of Chinese dishes from Hua Yuan is so unique: the entire menu is made up of dishes that have been bestsellers for years.
In collaboration with resident Hua Yuan chef, Chef Kevin Xu, this menu features dishes created and perfected by the visiting chef from Hilton Kuala Lumpur, Chef Lam Hock Hin. These Chinese dishes include some of his customer-certified “signature” or best-selling dishes. It’s customer certified because it’s the customers themselves who determine which are these dishes. Chef Lam explains, “My customer asked me what was my new signature dish, and I told him I have no signature dish until you let me know which dish is the best.”
The customer is, after all, always right, and in this case, the customers all had fantastic palates to choose these dishes.
You, too, will need to taste these dishes to realize just how worthy of that honor these dishes are. From the appetizer down to the dessert, the featured dishes are simply delicious.
The appetizer, Mix Salad with Kaori Bako, Golden Scallops and Anchovies, is a refreshing and delicious take on the classic lettuce salad with an Asian twist. Shredded crab meat and scallops, and tiny anchovies provide some savory meatiness while the luscious coconut dressing – with hints of curry leaf, onion, ginger, coconut cream, and anchovies – brings it all together into a savory-sweet bite.
Anyone who loves gelatinous food should be ecstatic to be served the Double-boiled Black and White Garlic Soup with Sea Cucumber and Spare Ribs. It may look intimidating at first glance, but the well-prepared sea cucumber is tender with a slight crunch, not unlike litid or tendon. Combined with the savory pork broth seasoned with the two kinds of garlic, it’s a bowl with surprising flavor.
Another showstopping and delectable dish on the menu that you should not miss is the Butter Milk Prawn with Egg Flakes and Scented Curry Leaves. It’s got all the delicious tastes and textures in one pleasurable bite: the incredibly succulent prawn is wrapped in crisp egg flakes. It’s tossed in a buttery, milky, and curry leaf-infused sauce that’s so delectable, you can’t eat just one – or even five. You’ll want an entire troupe of these luscious prawns.
The last dish of this collaboration menu with the visiting chef is the Smoky Grilled Slice Pork with Leeks. Tender sliced pork are kept smoked until the moment it’s served where lifting the glass bowl releases the smoke and gives you a whiff of what you’ll be tasting.
This is just four of the delicious 8 dishes on “The 8-Course Exquisite Collaborative Dinner Menu” (P2,888 net per person for a minimum of six diners) with Chef Xu contributing these Shanghainese favorites: Fragrant Tea-Smoked Duck, Deep Fried Grouper Sweet and Sour Style with Pine Nuts, Fried Rice with X.O. Sauce, and the dessert Coconut Cream Jelly with Taro Balls and Peach Gum.
