Who says adobo is just for savory appetizer or ulam? Hiraya Bakery adds a sweet and savory way to enjoy adobo with their Chocolate Black Pepper Bay Loaf, an adobo-inspired cake.

Yes, you read that right: adobo-inspired. Don't worry, there's no soy sauce or vinegar involved in making this cake. The Chocolate Black Pepper Bay Loaf (P160/slice; P1,700/whole cake) is a cake made with a moist coconut milk base and a black pepper-spiced chocolate cake. It's frosted with a soy-salted dark chocolate ganache and is filled with a bay leaf-flavored custard

According to Colette dela Cruz, owner of Hiraya Bakery, they came out with the Chocolate Black Pepper Bay Loaf three years ago which they sold in bazaars and at Siento Cafe, Hiraya Bakery's partner cafe in UP Los Baños. Now Metro Manila-based residents can enjoy this cake, too: the Chocolate Black Pepper Bay Loaf is now available in Hiraya Bakery's Diliman branch. Just take note that all of Hiraya Bakery's chocolate cakes are on rotation, so it would be best to contact the shop on your intended day of visit to make sure the Chocolate Black Pepper Bay Loaf is available.

Hiraya Bakery is located at 195 Maginhawa, Diliman, Quezon City and Siento Cafe is located at 10665 Oregano St Demarces Subd College, Los Baños, Laguna. Operating hours are 2 p.m. - 10p.m. from Tuesdays to Friday and 11 a.m.-10 p.m. from Saturdays to Sundays.
