How does one bowl of ramen standout in a city filled with tons of ramen houses? Well, Ippudo Philippines is steering away from the classic Tonkotsu broth and meaty pork chashu by replacing it with a completely new base and toppings. Meet the newest ramen in town: Mushroom Ramen!

The Mushroom Ramen (P420) is Ippudo’s first ever non-pork-based ramen with a light broth made with hand-picked mushrooms, house-made miso paste, and a douse of garlic oil. If you’ve ever dined in one of Ippudo’s restaurants, you will be happy to know that this ramen still uses their signature Hakata-style noodles–which are relatively thinner compared to the usual wheat udon noodles.

This bowl of ramen is topped with braised silken Japanese tofu, ajikikurage (cloud ear fungus), vibrant spring onions, and bean sprouts. Instead of the pork chashu, Ippudo tops it with three types of fried mushroom: the Shimeji, Enoki, and white button mushrooms which all give varying tastes and textures to this bowl of ramen.
