Le Cordon Bleu Ateneo Will Soon Offer Short Courses!

Le Cordon Bleu is an international network of hospitality and culinary institutes that teach French Cuisine. They have more than 35 institutes in 20 countries who learn how to innovate and at the same time be creative with all the dishes they make. Fun fact: Did you know that Julia Child and Giada De Laurentiis are alumnae of Le Cordon Bleu?

This year, the first Le Cordon Bleu finds its first home in the Philippines at Ateneo de Manila. If you can't commit to the usual 2-to-4-year course, the Le Cordon Bleu Ateneo Institute (LCBAI) will be offering three short courses that you can take this year:

The Art of Cooking Like a Chef (P8,500) focuses on the preparation of a 3-course French meal. The participants will be taught how to make Cauliflower Veloute (cauliflower and broccoli florets with spices and croutons, Lamb Navarin (with rosemary and a bouquet of vegetables), and the traditional Crème Brule.

If you're into sweets and dream of becoming a chocolatier, you should take The Secrets of Chocolate Making I (P8,500). This class will open your palate to the different types of chocolates and what sets it apart from each other, like the Muscadine, White Chocolate Truffles, Armagnac Truffles, Bailey's Truffles, Palais d'or Coffee. You'll also get your hands chocolatey as this class will teach you how to temper and mold chocolate!

French cuisine might be intimidating to most, but all you have to do is take the first leap! Le Cordon Bleu Ateneo Institute's Fundamentals of French Cuisine (P8,500) will teach you the techniques of making the basic stock, hot and cold emulsion sauce preparation, and how to apply it to different types of meaty dishes. The class will teach you how to prepare Tartare sauce and Supreme sauce that will be paired with fried and poached chicken, and Pepper sauce, Bordelaise sauce, and Bearnaise sauce that will be paired with beef sirloin.

Le Cordon Bleu Ateneo Institute's The Art of Cooking Like a Chef will be on July 27, 2019, The Secrets of Chocolate Making I is on August 3, 2019, and the Fundamentals of French Cuisine will be on August 10, 2019.
