1. Don’t flip too early.

Patience is key: wait until the crepe’s surface is no longer shiny andcheck if the edges are starting to get crisp and brown.

2. Add more butter for your first crepe.

Make sure you have enough butter to cover your pan; it will guarantee your first 5-6 crepes won’t stick to the pan (and you don’t need to add butter each time).

3. Use a ladle for the batter.

You can get consistently-sized crepes when you use a ladle to fill your pan. Don’t forget to quickly swirl the pan to spread the batter evenly!
