But did you know youĀ can also find a stall where fresh lumpia wrappers are made fresh and onsite every single day? Brothers Junjun, Jemar, and Leo PeĆ±aflor wake up as early as 4 a.m. every day to make lumpia wrappers at Farmers Market, a business they learned from their sister who used toĀ sell lumpia wrappers in EspaĆ±a, Manila.
Lumpia wrappers are simply made from flour, water, oil, and salt, shares Jemar but it took them more than a year to perfect the process. They make a vat full of lumpia wrapper mixture and shape it by simply using their glove-covered hands. The sight is a mesmerizing one: they scoop out mixture, place a dollop ofĀ it on a custom-made surface that resembles a crepe pan. "Matagal din bago naming na-'perfect' yung paggawa," admits Jemar PeĆ±aflor.
It takes four hours to finish cooking the whole vat and they share that they make seven sacks of lumpia wrappers daily. They have regular retail buyers and business and restaurant owners who depend on them to supply lumpia wrappers. The PeĆ±aflor brothers are the only ones who make fresh lumpia wrappers in Farmers Market. Chef Margarita Fores, who usually takes visiting chefsĀ on a market tour at the Farmers Market, also includes a stop at the PeĆ±aflor stall to showcase their skills. "Nakakatuwa din na madaming bumibili," shares Jemar.Ā
