Now on its third year, Madrid Fusion Manila 2017, is an annual conference that sparks conversation inspired by the biggest food trends of the year, the culture behind them, and the chefs that make it all happen. To be held April 6 to 8, 2017 at the SMX Convention Center, the conference's theme this year is "Towards a Sustainable Gastronomic Planet," where chefs from all over the world, including our own, will get to showcase their craft through talks and demos that sweep through the topics of using local ingredients and the innovation that it takes to make the most of them.

Aside from the chef talks and demos, there will be concurrent curated regional lunches organized by the Department of Tourism (DOT) and the Department of Agriculture (DA). The DOT's lunch revolves around our regional cuisine: Day One will focus on Luzon dishes, Day Two on Visayan specialties, and Day Three will highlight the flavors of Mindanao. This year, the DA lunches will focus on themes relevant to the local culinary scene: rice (April 6), nose-to-tail eating (April 7), and the third day on seafood, corn, atbp. (April 8).

Head over to Madrid Fusion Manila's main website to sign up for the talks and lunches. Here are a few exhibitors and presentors that you can look for:
