The Rabbit Hole is a picture-perfect cafe: pastel interiors meet quirky vintage clocks hung up on the wall, coupled with the soft buzz of conversation between friends. Smack in the center of Makati’s restaurant boom, The Rabbit Hole rides the energy with a focus on value-for-money quality comfort food.
22-year-old Maxine Marcelino runs the family-owned shop, overseeing everything from store operations to taste-testing and developing the menu (think decadent sizzling sisig, spicy kimchi rice bowls, and all-day breakfast!).
“We have a specialty that not many people know about yet!” Maxine declares, while simultaneously slinging out two, three—no—ten cakes from behind the counter, undoubtedly upping dessert stakes.
“Everything is homemade,” she explained, unfazed by our request to slice and dig into every single one of them. “We are pretty proud of our layered Brazo de Mercedes—it’s a crowd favorite in the café, too.”
There are two versions of their layered brazo de Mercedes cake—a play on the classic Filipino favorite: the first is one with a light yema filling while the other has a pop of purple yam (ube)-flavored yema filling. Both have five layers of cloudy, soft meringue.
If chocolate is more your thing, these cakes are can’t-miss favorites: tiramisu, classic chocolate cake, and chocolate mousse (shown left to right).
Other stand-outs are classics done well: unbelievably moist carrot cake covered in thick, smooth cream cheese frosting, fluffy chiffon cake with white chocolate ganache, and creamy blueberry cheesecake.
Maxine isn’t one to let Valentine’s week roll in without specialties, either: their strawberry shortcake and red velvet cheesecakes make for great options to spoil your loved ones.
