The People Behind Mendokoro Just Opened A New Ramen Store at Rockwell

Manila's got no shortage of must-visit ramen shops-and for the most part, these shops tend to feature ramen of the pork-centric tonkotsu sort. They're definitely tasty in their own right, but it's also worth exploring other kinds of ramen around-specifically paitan ramen, which instead highlights chicken! One new establishment does just that, and it hails from the geniuses behind fellow ramen mavens Yushoken and Mendokoro Ramenba. Check out the recently opened Marudori located at Rockwell, Makati.

Chicken is the star at Marudori, with the name compounding the Japanese words maru (from marumaru, or whole) and tori (chicken). "Marudori conveys our use of all the parts of the chicken in making our soup," the ramen shop writes.
Though the dishes, flavors, and soul of Marudori are definitely Japanese, they make it a point to source their chicken locally-which not only helps support the Philippine industry but also "ensures the freshness and quality" of the poultry. And make no mistake: Though their paitan broth is chicken-based, it's nevertheless thick and flavorful, making for soul-soothing bowls that deliver a different yet equally crave-worthy sort of richness from the usual tonkotsu ramen.

There's a lot to look forward to trying at Marudori; the Shio Paitan (P430) is a great place to start, as it best highlights the natural taste of their thick paitan broth enhanced just a tad with salt, along with chicken breast, yuzu peel, leeks, and menma. Should you be in for a more umami ride, try its soy sauce-infused sibling, the Shoyu Paitan (P460); or the spicy-creamy Tantanmen (P490) with the flavors of sesame and chili.
It's also worth exploring their tsukemen (dipping ramen) options like the Yuzu (P520), as well as their sides like the chicken-based Gyoza (P150/three pieces, P250/five pieces), Tsukune (P280/two pieces) or grilled chicken meatballs, and Garlic Chicken Chahan (P390). Outside the chicken-heavy entrees, you'll also find other dishes that feature shrimp, like the Ebi Miso paitan ramen (P640).

Drooling yet? Marudori is located at 8 Rockwell and is open from 11 a.m. to 9 p.m. every day. As with Yushoken and Mendokoro Ramenba, they don't take reservations and instead operate on a first-come, first-served basis. Only fully vaccinated guests can dine at their premises for now (be ready with your vaccination card, a valid ID, and your U Make Makati Safe QR Code); they've got seats both indoors and outdoors, though the latter is limited.
