Instead of the usual rice cake made with rice flour and kakang gata (the first press of coconut milk), the cafe bakes a light, fluffy, Japanese-style cheesecake as its bibingka base. The tops of their cheesecake look stunning: brown and caramelized, and topped with slices of chewy cheddar and salted duck egg.
