When in Dumaguete City, a trip is never complete without indulging in Sans Rival Cakes & Pastries' desserts. Then on your way home, you should allot time for another trip to their store for pasalubong. While boxes of silvanas and sans rival are a given, there's a pastry that you might be overlooking. Check out the pastry shops' "Josephines".

Jospehines is an original creation of Sans Rival Cakes & Pastries' founder, Trining Teves Sagarbarria. This is a pastry inspired by Bacolod's famous Napleones or Napoleons, which is a pastry made of thin puff pastry layers that are stacked on top of each other and with a sweet filling in between.

Sans Rival Cakes & Pastries' Josephines have two buttery puff pastries with vanilla custard filling in between, and is dusted off with confectioners sugar. Compared to the Napoleones, the Josephines don't have the details of having numerous puff pastry layers because it just has two large pieces of puff pastry.

If you know your world history, you might have already connected the dots as to why these are called Josephines. But if you don't, Sagarbarria was smart and witty to call these Napoleones-inspired pastries as Josephine because Napoleon Bonaparte's wife was named Josephine.
