Sapin-sapin is a Filipino rice cake made of glutinous rice flour and coconut milk (gata) and is topped with toasted coconut curd (latik). The chewy colorful layers also have flavors: the yellow has langka (jackfruit) flavors, the violet layer is ube-flavored, while the white layer is often coconut-flavored. Sapin-sapin is different from most rice cakes because of its chewy layers.
