Coffee Jelly-Flavored Ice Cream Exists And We Are Totally Here For It

When your need for caffeine jolt and sugar rush collide, you can rely on coffee-flavored desserts to satisfy these cravings in one go. If you're a coffeeholic with a sweet tooth, Sebastian's Ice Cream recently released a line of Jelly Ice Cream and one of the flavors you should try is the Coffee Jelly ice cream.
Just as you would make coffee jelly, which is typically made with coffee-flavored gelatin mixed with cream and condensed milk, Sebastian's Ice Cream's reinvented version of the dessert sticks to the classic. Ian Carandang, the owner of Sebastian's Ice Cream, decided to mix premium instant coffee-infused gelatin cubes with Condensed Milk Ice Cream instead of the typical and go-to vanilla ice cream. He says, "Going with condensed milk gave it a flavor reminiscent of Vietnamese Coffee which made it even more "pure" as a flavor with just coffee and milk and removing that added component of vanilla."
According to Ian, the Coffee Jelly flavor was inspired by his mother who bugged him for years to add it to the menu. The hesitation comes from the concern of keeping a fresh coffee jelly in stock, but then he solved this problem by adding the coffee jelly into the ice cream itself.
If you're not into coffee, Sebastian's Ice Cream's Jelly Ice Cream also comes in other exciting flavors: Lychee Dynasty and Buko Pandan. The Lychee Dynasty Jelly Ice Cream is almond jelly in lychee sorbet, while the Buko Pandan Jelly Ice Cream is made with pandan-flavored jelly and buko strips in coconut ice cream.
