Sourdough bread has been gaining popularity in Metro Manila even before everyone at home made bread during the quarantine. Smaller panaderyas, home bakers, and restaurants have been churning out this artisanal bread with a slight tangy flavor for the past few years. 

The taste (its slight sourness is a welcome change from the usual Pinoy sweet bread) and the patience and care into making this dense and hefty bread isn't its only appeal: it's also a healthier take on bread. Sourdough is actually made with natural ingredients and the fermentation process makes the bread easier to digest, it has high fiber content, and has a ton of nutrients.
