You Have To Try This Unique Yema Buko Pie!

Have you heard of a buko pie with a yema-flavored custard filling? Surprisingly, you can find this unique version of the buko pie in Malolos, Bulacan.
A quick Google search of “Yema Buko Pie” will lead you to TLM Yema Buko Pie. Leonara Magaling (TLM) is from Malolos, Bulacan, and she started out supplying coconuts around her hometown. Malolos doesn't have a large coconut supply and a lot of people noticed her coconut delivery was doing well.
She shifted gears and started to sell refreshing buko juice instead. Some of the buko meat often went unused and Leonora did not want to let the bulk of the remaining coconut meat to go to waste. This led her to experiment on how else she can use coconut meat.
Having grown up in a family of bakers, Leonora was fond of baking but wanted something more than the usual buko pie. Even though she didn't take up any culinary courses, the innovative idea of changing the buko pie filling came from Leonora who loved the taste of yema. She says, “Hindi ito karaniwan sa nabibili natin na ordinary pie. Ang gusto ko sa kanya ay creamy siya.” (It's not the usual buko pie you can buy anywhere. What I love about this is its creaminess.)
Her yema buko pie has the same crunchy and golden-brown pie crust of the usual buko pie. The yema custard filling is creamy and dense, almost close to the texture of egg pie–but with lots of silky coconut strips mixed in.
If you’re worried that it might be too sweet, don’t worry! It’s not as sweet as the usual candied yema you can commonly find in sari-sari stores, carinderias, or pasalubong centers. TLM Yema Buko Pie’s filling has a mild sweetness to it that’s far from being overwhelming.
