Chef Margarita Fores' mouthwatering Truffled Chicken Galantina is said to be inspired by her Wawa Ester's Bahay na Puti Galantina, but it's taken to a whole different level with the addition of Italian truffle and mushroom essence.

Fira's Kitchen

When it comes to great-tasting and affordable chicken galantina, Fira's Kitchen's 900-peso Chicken Galantina checks both boxes. They also have a Galantina Roll (P220) that uses the special galantina recipe they rolled in chunky chicken breast, pan-fried, and then seared, and there's also the Chicken Embutina (P150) that also uses their galantina recipe but cooked embutido-style.

NIC'S Chicken Relleno is made with a whole deboned chicken stuffed with different kinds of ground meat, spices, and queso de bola.

Romulo Cafe's Lola Virginia's Chicken Relleno is an heirloom recipe of Virginia Llamas, the wife of Philippine Ambassador Carlos P. Romulo. This dish is made with roasted half chicken stuffed with chorizo, Vienna sausages, ground pork, raisins, and peas, and is said to be made strictly by hand, by one of only two men who know the right technique to make this relleno.

The Plaza Catering

Besides ordering The Plaza's famous ham for the holidays, they also have chicken relleno you can order all year round. The classic relleno they serve uses a decades-old recipe that has chorizo, cheese, olives all tucked inside a whole chicken.
