When it comes to great-tasting and affordable chicken galantina, Fira's Kitchen's 900-peso Chicken Galantina checks both boxes. Romulo Cafe's Lola Virginia's Chicken Relleno is an heirloom recipe of Virginia Llamas, the wife of Philippine Ambassador Carlos P. Romulo. This dish is made with roasted half chicken stuffed with chorizo, Vienna sausages, ground pork, raisins, and peas, and is said to be made strictly by hand, by one of only two men who know the right technique to make this relleno.
