Romulo Cafe's Lola Virginia's Chicken Relleno is an heirloom recipe of Virginia Llamas, the wife of Philippine Ambassador Carlos P. Romulo. This dish is made with roasted half chicken stuffed with chorizo, Vienna sausages, ground pork, raisins, and peas, and is said to be made strictly by hand, by one of only two men who know the right technique to make this relleno.

The classic relleno they serve uses a decades-old recipe that has chorizo, cheese, olives all tucked inside a whole chicken.
