Here in Canada, it's probably harder to find fresh tamarind pods than finding Big Foot in the Canadian Rockies. Our winters are brutally cold and sinigang is a must. My recipe uses beef ribs, bone marrow, and preserved tamarind. The resulting flavor is richer and more complex.¬†
