Healthy meals don't have to be boring!
A healthy chicken meal with a creamy avocado sauce!
4 ounces chicken, use fillets
3 tablespoons paprika
1 teaspoon cayenne powder
1 teaspoon thyme leaves
1 teaspoon oregano leaves
1 teaspoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon pepper
1 cup or 70 grams plain yogurt
1 teaspoon lemon juice
2 tablespoons spring onions, (for garnish)
2 cups brown rice, (Optional)
Make blackened seasoning by combining paprika, cayenne, thyme, oregano, garlic powder, onion powder, salt and pepper. Place the chicken breasts and 2 tablespoons of blackened seasoning in a large resealable bag. Seal and shake a few times to evenly coat the chicken.
Lightly coat a large skillet with nonstick cooking spray and heat over medium-high heat. Add the chicken and cook until cooked through, 4 to 6 minutes per side.
Meanwhile, in a food processor, combine the yogurt, avocado, lemon juice, garlic powder, and salt and pulse until smooth and creamy.
To serve, top each chicken breast with 2 tablespoons of the creamy avocado sauce and garnish with spring onions.
