  • 200 Grams pork lungs cleaned and chopped
  • 200 Grams pork heart cleaned and chopped
  • 200 Grams pork intestines cleaned and chopped
  • 200 Grams pork liver sliced thinly
  • 1 big onion chopped
  • 6 cloves Garlic finely chopped
  • Salt
  • 3 pcs long green chilies (siling pangsigang)
  • ginger finely chopped
  • water for boiling
  • Achuete Seeds (annatto seeds) Optional
  • 3 tablespoons Vinegar


  • In a large casserole, put water about 4-5 cups. Add the pork lungs, heart, liver and intestines. Cover and bring to boil for 15 minutes.
  • Remove from the casserole to drain and let cool. Slice them or chop like small cubes.
  • In a large cooking pan, saute the chopped onion and garlic. Add the chopped pork parts. Continue sauteeing for 5 minutes.
  • Pour the vinegar, green chillies and season with salt and pepper. Mix gently and cover. Simmer for another couple of minutes or until cooked.
  • Transfer to a serving plate and serve.
