Ingredients
Bopis
- 200 Grams pork lungs cleaned and chopped
- 200 Grams pork heart cleaned and chopped
- 200 Grams pork intestines cleaned and chopped
- 200 Grams pork liver sliced thinly
- 1 big onion chopped
- 6 cloves Garlic finely chopped
- Salt
- 3 pcs long green chilies (siling pangsigang)
- ginger finely chopped
- water for boiling
- Achuete Seeds (annatto seeds) Optional
- 3 tablespoons Vinegar
Instructions
- In a large casserole, put water about 4-5 cups. Add the pork lungs, heart, liver and intestines. Cover and bring to boil for 15 minutes.
- Remove from the casserole to drain and let cool. Slice them or chop like small cubes.
- In a large cooking pan, saute the chopped onion and garlic. Add the chopped pork parts. Continue sauteeing for 5 minutes.
- Pour the vinegar, green chillies and season with salt and pepper. Mix gently and cover. Simmer for another couple of minutes or until cooked.
- Transfer to a serving plate and serve.
