Make this Filipino dish at home!
Bopis is a dish made of pork innards and cooked with a spicy-sour base.
200 grams pork lungs, cleaned and chopped
200 grams pork heart, cleaned and chopped
200 grams pork intestines, cleaned and chopped
200 grams pork liver, sliced thinly
1 big onion, chopped
6 cloves garlic, finely chopped
3 pcs long green chilies (siling pangsigang)
ginger, finely chopped
water, for boiling
achuete seeds (annatto seeds), Optional
3 tablespoons vinegar
In a large casserole, put water about 4-5 cups. Add the pork lungs, heart, liver and intestines. Cover and bring to boil for 15 minutes.
Remove from the casserole to drain and let cool. Slice them or chop like small cubes.
In a large cooking pan, saute the chopped onion and garlic. Add the chopped pork parts. Continue sauteeing for 5 minutes.
Pour the vinegar, green chillies and season with salt and pepper. Mix gently and cover. Simmer for another couple of minutes or until cooked.
Transfer to a serving plate and serve.
