Perfect cheesy cheese cake for cheese-lovers!
50 grams butter, at room temperature
250 grams cream cheese
110 ml (about 1/2 cup) milk
60 grams all-purpose flour
1 pc vanilla bean pod
20 grams cornstarch
1/4 teaspoon salt
6 pcs egg, yolks only
1 teaspoon calamansi juice
6 pcs egg, whites only
1/4 teaspoon cream of tartar
140 grams sugar
1 teaspoon vanilla extract
In a small pan over simmering water, mix together butter, eggyolks, cream cheese, and milk. If you opt to use vanilla bean, scrape the bean from vanilla pod and add to the pan. Cool to room temperature.
Using a mixer, add in flour, cornstarch, and salt. Then the egg yolks and calamansi or lemon juice. Set aside.
In a separate bowl, mix egg whites and cream of tartar until foamy. Add in vanila and gradually add sugar untill stiff peaks. Fold in the egg whites to the cream cheese mixture. Make sure everything is well combined.
Pour batter into an 8-inch round cake pan covered with parchment paper.
Preheat oven to 325F and bake in a water bath for an hour and 10 minutes or until cooked. Let it cool and rest.
