An easy chicken recipe with fresh flavors.
200 grams chicken breast fillet, cut into chunks
1/2 teaspoon salt, divided
1/2 teaspoon ground pepper, divided
1 teaspoon extra-virgin olive oil, divided
3 cloves garlic, minced, divided
1/2 lemon, juiced
1/4 teaspoon rosemary
1/4 teaspoon parsley
2 cups baby spinach
Season chicken with 1/4 tsp salt and 1/4 tsp pepper. Let stand for 10 minutes.
Heat 1/4 teaspoon oil in a pan. Fry chicken 5 minutes per side or until golden brown. Set aside.
In a small container, mix lemon juice with half of the garlic and remaining salt and pepper. Add and mix in the rosemary, parsley, and 1/2 tsp oil.
In the same pan, sauté remaining garlic in the remaining oil. Add lemon-herb mixture. Return chicken into the pan.
Add spinach. Simmer until spinach leaves are wilted. Remove from heat and serve.
