Cold days call for a bowl of pancit molo.
Pancit Molo is a pork dumpling soup which originated in Iloilo.
1/4 kilo pork, use ground pork
6 cloves garlic, minced
1 pc onion
1 250-gram pack wanton wrapper
1/2 cup chicken, (use breast part), shredded
1/4 kilo shrimp, sliced into thin strips
green onion, roughly chopped, for topping
4 cups of chicken stock
1/2 cup milk
1 piece egg
Make the Molo Balls: In a small bowl, combine the ground pork, salt, pepper, chopped parsley, minced garlic, and egg. Mixed together. Then wrap in the wanton wrapper.
Saute garlic, onion, shredded chicken breast and the shrimp in a pan. Add chicken stock and bring to a boil.
Add in the molo balls and let simmer for 5 minutes just to cook the meat. Then pour the evaporated milk and stir gently.
Transfer to a bowl and sprinkle the scallions on top. Enjoy!
