Sotanghon guisado with sesame seeds would be your ultimate comfort food. This is best when served hot.
200 grams pork, sliced into thin strips
200 grams shrimp, peeled and sliced
3 cups shrimp stock
1 medium carrot, peeled and chopped
1 small chinese cabbage (baguio pechay), sliced
400 grams chinese vermicelli (sotanghon)
4 cloves garlic, minced
1 big onion, chopped roughly
2 tablespoons hoisin sauce
2 tablespoons soy sauce
vegetable oil, for sauteeing
sesame seeds, roasted
7 pcs long beans (sitaw), sliced diagonally
First, marinade the sotanghon noodles in water for just a few minutes to soften. In a heated large cooking pan, put the oil. Add the onion and garlic. Saute for few minutes.
Add the sliced pork belly. Continue sauteeing until it becomes brown. Put the shrimps, hoisin sauce and soy sauce. Just continue the saute process for about 2-3 minutes and cover.
Pour the shrimp stock and water and bring to a boil. When it is boiling, drop the sotanghon noodles and let simmer until it becomes transparent or slightly cook.
Season with salt and pepper. Add the vegetables. Cover. Let cook for a couple of minutes. Leave a little bit of juice so it won't get dry.
Sprinkle a little of vegetable oil to make it shiny. Toss gently. Transfer immediately to a serving plate.
Garnish with sesame seeds on top. Serve and eat right away. Enjoy!
