Ingredients
  

Adobong Malunggay at Tahong

  • 500 Grams mussels cleaned and beards removed
  • vegetable oil for sautéeing
  • 1 (1-inch) piece ginger minced
  • 2 cloves Garlic crushed and minced
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Vinegar
  • 1/2 Cup Mussel Broth
  • 1 tablespoon brown sugar
  • 1 bay leaf
  • Pepper to taste
  • 1 Cup malunggay leaves (moringa)

Instructions
 

  • Place mussels in a pot and add enough water to cover. Bring to a boil and cover with the lid, allowing mussels to cook. Once shells have opened, remove from heat and drain. Discard mussels that remain closed. Set broth aside.
  • Once cool enough to handle, remove meat from shells. Set mussels aside.
  • Heat oil in a pot over medium heat. Saute ginger and garlic until fragrant. Add soy sauce, vinegar, mussel broth, sugar, bay leaf, and mussels. Season with pepper. Simmer for 3 to 5 minutes.
  • Add malunggay leaves. Simmer for another minute. Remove from heat and transfer to a serving bowl.
