Alubias Con Carne de Cerdo y Chorizo (Beans with Pork and Chorizo)

Heat oil in a large pot. Fry the pork until golden brown, about 2 to 3 minutes per side. Add the onions and sauté until translucent.Add the garlic and cook until fragrant. Add the chorizo and fry for 1 minute.

Add the white beans, stock or water, bay leaves, and paprika. Bring to a boil then lower heat to simmer, covered, for 15 to 20 minutes, until pork is tender and mixture has slightly thickened.

Season with salt and pepper. Cook for 1 to 2 more minutes. Garnish with parsley if desired. Serve with warm crusty bread to soak up all the flavorful sauce.
