Ingredients
  

Apple, Beet, and Jicama Slaw

  • 3 beets julienned
  • 1 large Green Apple julienned
  • 1 medium jicama (singkamas) julienned
  • 3 tablespoons red wine vinegar
  • 4 tablespoons honey
  • 1/4 Cup olive oil
  • Salt to taste

Instructions
 

  • In a bowl, combine matchstick slices of beets, green apple, and jicama.
  • Make the dressing: In another bowl, combine red wine vinegar and honey. Slowly drizzle in olive oil.
  • Pour vinaigrette over beets, apples, and jicama; toss. Season to taste.
